(no I did not make these pictured to the left)Yesterday was a day of silly mistakes. It all started when Chloe and I made some blueberry muffins (from the box of course). We put in the oil and milk then added the mix and gently folded in the blueberries (by the way, they give you about half of the blueberries they used to in that tin can, such a rip off). Dropped the mix into the muffin paper cups and then into the hot preheated oven they went. I set the timer for a couple minutes less because last time they got a little burned. I was truly a Betty Crocker and had involved my one year old child to boot. Oh but wait...2 minutes into the cook time I remembered the two eggs were still in the fridge and not in the muffins. I admitted my mistake and out they came from the hot preheated oven. Scrapped from the paper cups (glad I used those), and cracked 2 eggs into the bowl. I mixed it all in, destroying the blueberries, pulled out the paper cups and redistributed the mix into the muffin pan. It was a lucky catch because the muffins turned out just fine. Chloe has been eating them ever since and no complaint has escaped her lips. Mike seems to be okay with them too.
If that were not enough this is how dinner went. I made a calzone for dinner last night. I pulled out the chicken and cooked it in the oven (such yummy moist flavor). Next I cut up the tomatoes and stretched the pizza dough. Then started the layering. First the sauce on the bottom, next chicken, tomatoes, olives and cilantro (our favorite). I folded over the dough and into the again preheated oven it went. As I was cleaning up the mess, I discovered the bag of grated mozzarella cheese sitting on the counter. How can you for get the most important ingredient of a calzone? So out come the calzone from the oven. I couldn't open it so a healthy sprinkling of cheese went on top and back into the oven to cook. Everything turned out fine, but it wasn't my best cooking experience. I might try cooking again today but we'll have to see. Maybe I will make my favorite oatmeal chocolate chip cookies. I nearly have that recipe memorized.
But wait you would think that would be all the mistakes a girl can make in one day, but no, not Jodi. Yesterday was a great day of floor cleaning. I got the hardwood floors on the main level all vacuumed and cleaned with floor cleaner. It was so nice to have that done. As I went along vacuuming I would pick up rugs and throw them some where else. I took the two rugs in the kitchen and threw them on the railing outside our back door. Harmless you would think, but no my third major mistake from yesterday was discovered this morning when Mike saw they were still on the railing. Not a big deal except it rained last night. Oh well, here's to a better day today.

Yeah, I am wondering what in the hell is wrong with you too? I mean, cooking 2 times AND cleaning in one day? What have you done with my Jodi? I prefer to be sub standard in the happy homemaker wife and would like my company to return! Ha Ha. And by the way, I need your recipe for cookies and for those chicken turnover things...no cookbook for another 2 weeks! Seriously, email me the cookie one or put it on your blog lady!
Are you pregnant? Just kidding! But that is a pretty funny day. Chloe, with her sweet smile, must have lured you from your duties...
I am still impressed with both things baked. I only wish we could have "stopped by" to try those calzones!
